Roasted Marinated Mushrooms

 Ingredients:

2 Tbsp Balsamic Vinegar
1 Tbsp Coconut Aminos
2 Tbsp Orange Juice*
Fresh ground black pepper to taste
Mushrooms^

Directions:
Blend vinegar, aminos, juice and black pepper. Pour marinade and mushrooms into gallon size zip lock baggie, or other water-tight container. Tumble, mix, jostle, whatever it takes to encourage the mushrooms to absorb the marinade. Pre-heat oven to 400 degrees (F). Single layer mushrooms (stem side up) on baking sheet lined with parchment paper. Roast for 15-30 minutes (dependent on size of mushrooms), until mushrooms are thoroughly cooked.

*Juice from the fruit is best but orange juice not from concentrate is an acceptable substitution.

^Mushrooms known for absorbing marinades, such as Portobello or Maitake, work best for this recipe.
